Weekly menu 10/16/17

Happy Monday! As much as I LOVE the weekend, I LOVE routine- so Mondays can be FUN!!! I promise! This weekend had us doing lots of band things! It was SENIOR night- we stood on the football field with our daughter and my only goal was to not completely embarrass her by being a bawl baby. I think I did pretty well… only got teary eyed and was able to keep all of my sadness inside…

Besides me being an emotional wreck …. we had  another band competition, church stuff, projects around the house (did some changes to my coffee bar that I will be sharing soon), laundry (wash, dried, folded & put away ta da!!! ), tried out my NEW mop from Norwex. OH MY GEEE~ Have you heard of this company? Every product I have from them is absolutely AMAZING!!! I will probably do a whole blog post on this stuff. Love It!! I’ll be the first one to admit that I am not a movie watcher, it usually takes me a long time to see a movie  (just ask one of my best friends- right CiCi), so I know I am a little late to the party with this one- but Warrior is a great movie.  My husband has seen it probably a trillion times because that’s how he is with movies, he started watching it and I got hooked- GREAT MOVIE. I may be the last person on Earth to have seen it, but if you haven’t seen it yet, I am here to tell you- totally worth your time.

 

 

 

But obviously we need to eat dinner, so I have our weekly menu for your viewing pleasure~

Monday: 

Philly Cheese Steaks- this is such a fast and easy meal. The steak is bought frozen and you cook it from a frozen state. No thawing or anything. I sauté up some mushrooms and onions to go with it, add some swiss cheese! My kids really like hoagie buns, but us grownups put it over white rice or cauliflower rice.

Tuesday:

Tacos with Guacamole. Stop by tomorrow and I will give you THE BEST Guacamole recipe!

Wednesday:

Buffalo Chicken Casserole- from my favorite Paleo Blog PaleOMG! 

Thursday:

Pork Shoulder Roast

Have you heard of the Pioneer Woman? I love her show on Food Network. She doesn’t typically make healthy meals, but I have learned to adapt them a little, by making some simple changes. I personally make this into a crockpot meal, just because it works great for us on Mondays to do a crockpot meal.

The edits I make are:

  • When making the marinade/sauce I go step by step, per the recipe except I sub out the sugar- instead of brown sugar, I use coconut sugar
  • To make it into a crockpot meal, after making the sauce I coat the entire pork roast in the crockpot, flipping it around in it so it coats all sides. Then I put it on low and cook it all day long, over 12 hours

It makes the best shredded pork EVER! You can put it on tortillas, make it into a bowl with rice,or cauliflower rice, or just eat it by itself really- it’s that good.

Friday:

Saturday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or use a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!!
