Happy Labor Day & Happy Meal Plan Monday! I hope you were able to have a nice day off doing something you love! We started the day off with a Birthday Brunch at my mom’s. Brunch is one of my favorite meals EVER! There is something about it that allows you to be a little lazy and enjoy your meal. One of the things my mom made this morning (per request) is my FAVORITE breakfast casserole! It is called Easy Breakfast Casserole it is so yummy & makes for great leftovers too! Then we just did some things around the house, got a work out in, ran some errands and we just finished up dinner!
It feels like a Sunday, doesn’t it? So now that the evening is winding down, it is time to get ready for the week! It is going to be a super busy one at our house, so I really need to be focused on doing this “prep work”.

Our Meal Plan for the Week:
Monday– Meatloaf with baked potatoes and salad ( I made 2 meatloaves so that way we have a pan left over for lunches) Making 2 of something is usually not much more work than making 1, so it makes sense to make an extra to freeze for a later day or use for lunches for the week.
Tuesdays– Tacos with guac and rice
Wednesday– Chicken Fajitas
Thursday- Breakfast for dinner
Friday– Crockpot Roast with carrots, onions, mushrooms
Sunday– BLEATS: Take your classic BLT’s but add and Egg & Avocado YUM!!!
