Make My Menu Monday 1/22/18

Happy Make My Menu Monday friends! My kids and I  are all cozied up on this Snow Day! So far our day has consisted of some hot chocolate &  coffee mixed with old episodes of Will & Grace. It’s also the PERFECT day for Menu Planning!!  I call that a 10 out of 10 day! Hopefully your day is a 10 out of 10 as well.

Menu Plan for the Week~
Monday:

Philly Cheese Steaks with Buns or Rice- this meal is really quick to throw together. There is a brand called Gary’s Quick Steak. All you do is take it out of the freezer- no thawing required, just throw it in there frozen!! It has a seasoning packet with it. I usually cook up some onions & garlic (mushrooms if I have them) to cook with. Then after the meat is all cooked, add some swiss cheese on top until melted. Serve with a hoagie bun, rice or cauliflower rice. Any way you choose- it is delish!

Paleo Beef Enchiladas ~ new recipe alert!!! Found at Paleogrubs.com

Ingredients
  1. 1 lb. ground beef
  2. 2 tbsp extra virgin olive oil, divided
  3. 1/2 onion, finely diced
  4. 1 jalapeno, minced (I will omit these)
  5. 1 avocado, diced
  6. 3 tbsp fresh cilantro, chopped
  7. 9 Paleo tortillas
For the sauce
  1. 1 small onion, diced
  2. 4 cloves garlic, minced
  3. 2 cups tomato sauce
  4. 2 cups chicken broth
  5. 2 tbsp chili powder
  6. 1/2 tsp cumin
  7. 1/4 tsp dried oregano
  8. Salt, to taste
Instructions
  1. To make the enchilada sauce, heat one tablespoon of olive oil in a heavy saucepan over medium-low heat. Sauté the onion and garlic for 4-5 minutes until soft. Add in the remaining ingredients except the salt and bring to a boil. Reduce the heat and simmer for 15-20 minutes, until the sauce has thickened. Season to taste with salt. If desired, use an immersion blender to puree the onion and garlic into the sauce.
  2. Meanwhile, heat a tablespoon of olive oil in a large skillet over medium heat. Add the onion and sauté for 4-5 minutes until soft. Stir in the ground beef and jalapeno and season with salt and pepper. Cook until the meat is browned, then remove from heat. Stir in a few spoonfuls of the enchilada sauce to coat the meat.
  3. Preheat the oven to 350 degrees F. Coat the bottom of a 9×13-inch baking dish with a very thin layer of the enchilada sauce. Fill each tortilla with the meat mixture and roll over. Place the tortillas in the baking dish side by side. Cover with the remaining sauce and bake for 12-15 minutes. Serve immediately, topped with avocado and cilantro.
Friday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or click here for a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!!

Crockpot Roast with Carrots, Onions & Potatoes

EASY RECIPE ALERT!!! Throw in a roast: sliced onions, garlic & baby carrots. Add some the spices that you LOVE (I use~ salt, pepper, garlic powder) a little olive oil & some water. Leave in crockpot on low all day~ 6-8 hours.

Fitness Friday 1/19/18

Well Happy Friday Friends!! Welcome to my new blog series “Fitness Friday”.  Every Friday, I would like to share different ways to stay active. Working out doesn’t always have to mean going to a gym.  Try a bike ride,  body-weight exercises at home or in the office, or a dance party with your kids.  I personally use all of those things. Part of having a Real Life means that we aren’t perfect & we have to make do with what is happening in our day.  In case you missed my post the other day about making my vision board , I made some goals for myself for the year. To kick off Fitness Friday, I wanted to share my Fitness Goals for the year. Everyone’s fitness goals are going to look extremely different, depending on where you are at on your journey, your overall health & obviously please talk to your doctor or a professional before you start any kind of exercise routine, to make sure that you are safe to do so. Anything I share about fitness, comes from my own personal experience and not from any level of professional advice!!

It always makes me a little nervous to share personal things… but hopefully it is helpful to see!

 

Goal #1~

First and foremost, I am running the 1/2 Marathon this year.It’s been 4 years since I ran a 1/2 marathon.  While I am super excited, I am also little freaked out! Running doesn’t come natural for me, so I have to stick to a training plan!

Goal #2~

Improving gymnastics Crossfit  movements that I want to work on are: Toes to Bar, continue to improve my pull-ups & I would love to be able to get a bar muscle up or a ring muscle up.

Goal #3~

Workout at least 5 times a week. Again this doesn’t necessarily have to be in a gym. If you saw my post the other day about Aaptiv it’s an app that gives you tons of workouts that you can do from anywhere!

Goal #4~

Yoga at least 1/week. When I do yoga, it brings me peace. Going back to my word of the year, I am looking for more ways to bring PEACE in to my life.  Again that Aaptiv app has yoga classes, so it makes it easy to do from home!!

Goal #5~

Is related to Goal #1 Run 3/week, which will be my training plan while I am training for the 1/2. After the 1/2 is over I would like to continue to run 3/week. Running without a race planned  is not something that I have been able to do in the past. So I will have to check back with you in May to see if I can keep it up!

Wellness Wednesday~ 5 things to do daily to encourage a peaceful day

Welcome friends- it’s my first Wellness Wednesday post.  What defines wellness varies from person to person. For me, Wellness is a balance between Body, Mind and Spirit. So my hope is, on Wednesdays to bring to my blog different ways that I am practicing Wellness in my life. Each Wednesday will look a little different , but hopefully it is always a day that will bring you some new ideas and allow sharing of some great ideas!  Recently, I posted on making a vision board and My Word of 2018. The best definition that I have found of PEACE= it does not mean to be in a place where there is no noise, trouble or hard work. It means to be in the midst of those things & still be calm in your heart. So my question for myself~ was how do I bring peace into my life even when life doesn’t feel peaceful?

The answer to this question is going to be different for everyone and it might be a trial and error adventure to find out! Big goals and dreams are important to have, but what we do on a daily basis helps shape those goals and dreams.

My 5 things to do daily to encourage a peaceful day:

  1. Meditate~ Simply Being App
  2. Reading my devotional~ My favorite one that I have found is  The Book of Awakening by Mark Nepo
  3. Exercise~ I love going to Crossfit, there are a millions of ways to exercise every day- Aaptiv is an app that helps you workout anywhere
  4. Read~  sometimes I use it to take me away & sometimes I use it to learn either way I am making it a priority every day
  5. Journal~ using a pen and paper to write down thoughts and feelings is therapeutic in many ways! If you need some prompts here is a great journal called Start Where You Are  or this one One Line A Day which gives you enough room to write a sentence- so no pressure!!

Make My Menu Monday~ January 15, 2018

Well howdy! It is hard to believe that we are starting the 3rd week of January! Have you made any New Year’s Resolutions or Goals for 2018? I recently had 2 blog posts about the New Year~ did you see them? If not check them out here A Healthier Way to Ring in the New Year  and here Using a Vision Board and My Word for 2018 It’s a new week and another menu to plan! I have been switching up my menus recently  & trying at least 1 new recipe a week!  Using a crockpot is a great time saver. Click here to see the crockpot that I use and love.

Pork Shoulder Roast

Have you heard of the Pioneer Woman? I love her show on Food Network. She doesn’t typically make healthy meals, but I have learned to adapt them a little, by making some simple changes. I personally make this into a crockpot meal!

The edits I make are:

When making the marinade/sauce I go step by step, per the recipe except I sub out the sugar- instead of brown sugar, I use coconut sugar
To make it into a crockpot meal, after making the sauce I coat the entire pork roast in the crockpot, flipping it around in it so it coats all sides. Then I put it on low and cook it all day long, over 12 hours
It makes the best shredded pork EVER! You can put it on tortillas, make it into a bowl with rice,or cauliflower rice, or just eat it by itself really- it’s that good.

Vision Board & my word for 2018

Have ya’ll ever heard of a vision board? A few years ago I hosted a girls night where we made vision boards- it was a fun way to spend the evening and making some goals.A vision board is basically giving you a visualization of your goals or hopes. It works best if you put it somewhere that you will see everyday.   My vision board needed some overhauling, so I took everything off of it and started fresh. Also I decided to do a “word for 2018”, I got this idea from another blog that I follow, called Moneysavingmom.com, she has great ideas on how to save money and posts about life in general. Here is her post on picking a “word for your year” After doing some soul searching on what I want this year, I came up with an overwhelming feeling that PEACE would be my word. So as I make my goals and think about choices that I want to make for the new year, they will all reflect back to PEACE. Doesn’t that sound peaceful 🙂

 

Here is how I assembled my board:

Blank slate- I found this cute cork board at Target, but you can even use a poster board! Here is a link to a similar one on Amazon. 

Assembling the parts- using paper designed for a scrapbook, similar to this linked here- (side note~ I have used this paper for multiple crafty projects or it is perfect for scrapbooking too)

The quote of the year! It is easy to be peaceful when everything is going “right”, but to remain peaceful when things are chaotic, that is real peace. Finding real peace is my number one goal for this year.

Daily goals- Here is where I write in the things that I want to make sure that I do DAILY. Big goals are great, but it is those things that we do on a daily basis that add up the most!!

My kids and I (aka Tribe Squad) made some goals for us for the year.  We actually have a “Tribe Squad” vision board that is in the kitchen, but I also wanted to add the goals from that board on my own personal one also as a reminder.

A place for my blog goals- I would like to start a daily schedule, so this card with a spot for each day was perfect!!!

Weekly Menu January 8, 2018

It’s my first weekly menu of the new year!! My kids have been in Guatemala on an amazing mission trip over the past week, so there was no need to make a menu last week!!! My kids have such amazing, giving hearts and it brings me so much pride to see them helping change people’s lives. Working with Constru Casa is a life changing experience & I hope to make it back there myself very soon!!!  Here are some pictures of their experience!

Wednesday:

Shrimp, Sausage & Grits

  • 1 lb shrimp (I personally like getting the pre cooked, deveined you can find behind the meat counter)
  • 1 tsp Old Bay Seasoning
  • 1 package of Smoked sausage precooked then cut into thick slices (I use the one that is the big giant link that is shaped like a big U)
  • 2 cloves of garlic minced
  • 1/4 cup of water
  • salt and pepper to taste
  • 1 T butter
  1. Heat skillet with butter. Saute garlic for a few minutes. Add shrimp and Old Bay seasoning. Shrimp cook FAST & if you have the precooked ones then you are really just warming them quickly. Remove from the pan but keep them warm.
  2. Add more butter to pan, then add the cut up sausage. Just lightly brown it. Then add back in your shrimp that you have been keeping warm. After cooking that all together for about 1 minute, add the 1/4 cup of water and cook for 30 seconds. Make sure you scrap the pan to loosen the little brown bits.

Cheese grits

  • 3 cups water
  • 1 cup uncooked quick cook grits
  • 1 cup of milk
  • salt and pepper to taste
  • 1/2 tsp Worcestershire sauce
  • dash of hot sauce
  • 1/2 cup parmesan cheese
  1. Bring water to a boil
  2. Stir in grits- cover & simmer for about 5 minutes
  3. Stir in the milk then remove from heat
  4. Add the rest of the ingredients

Add some cheese grits to your plate, then put the shrimp and sausage mixture over the grits- enjoy!!!

Thursday:

Chili & cinnamon rolls

The basic Chili recipe I follow is:

  • 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
  • 1/2 yellow onion & clove of garlic (diced)
  • 2 cans of tomato sauce
  • 1 can of tomatoes
  • 2 cans of beans (I used chili & black beans)
  • spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.

Heat pan with olive oil & sauté diced onion and garlic

Add ground beef and pork until cooked through

Add beans, sauce, tomatoes, & spices

If you can,  put all in a crockpot and let it all cook together for several hours

Easy Baked Honey Garlic Chicken 

  • I will use Coconut Aminos instead of the Soy Sauce
  • Serve with your choice of rice

A Healthier way to Ring in the New Year!!

There is something about the New Year that gives us a chance to reflect on our path in life. Sometimes there are big things going on and sometimes just some tweaks here or there we need to make. Whatever spectrum of this you are on I wanted to share my ideas for A Healthier way to Ring  the New Year for the whole body- Mind, Body and Spirit!!

Mind:

  • Journaling

There is nothing like writing with a pen and paper. I have been trying to journal every day and let me tell you- it is great!

If you want to journal, but it seems a little overwhelming try this One Line A Day Journal

If you need some direction with your journaling- try this one that comes with prompts on what to write called Start Where You Are

  • Reading-

I have always loved reading, I am thankful that my kids love reading too. Sometimes I use it as an escape and sometimes I use it to learn. Either way it is something that I love.

  • Practicing Mindfulness-

I have attempted meditation multiple times, but my mind wanders and is intruded with thoughts as soon as I try! Thankfully my cousin introduced me to this app called Simply Being. It starts with a guided meditation (you pick the length of time) and then music or nature sounds (again you pick the amount of time). I tried it for the first time last night & fell asleep before I even got past the guided meditation.

  • Gratitude-

I stubbled upon this website Jenniferdukeslee.com and found this gratitude challenge. 

There is a printable version on her site- If you want, join me in the next 30 days in participating. Also check out her site. After spending a small time looking through ( I have it saved to go back and look more in depth) I was really impressed!

Get moving every day

Take walk or a jog

Sign up for a run 5K, 1/2 Marathon, Tough Mudder, Crossfit Competition or Triathlon if you need that kind of motivation to stay on task

Aaptiv- it’s an app that let’s you workout when you want, where you want, the way you want!  More than 2,500 workouts 

Find a gym that you love- the gym I go to is a Crossfit gym. The workouts and the community keep me coming back!! I try to workout 5 days a week

Spirit:

  • Feed your creativity-

Get crafty, scrapbook, make jewelry, paint, take a how-to class, start a blog, take pictures- whatever feeds your creativity, do it!!! Pinterest is a great resource for finding ways to be creative.

  • Daily devotional-

Picking  a daily devotional is definitely personal preference, but my favorite is called The Book of Awakening

  • Vision Board-

A vision board is a visualization of your goals, dreams and how you want to feel

Put it somewhere you will see every day

  • Use a cork board or  poster board, scrapbook paper, pictures, quotes, cutouts from a magazine
  • I will be making a post on it this week with lots of ideas!
