Weekly Menu December 4, 2017

Happy Monday! It is hard to believe that it’s December already! I am so behind on my Christmas shopping, so that is definitely a goal for this week!! We are starting a fun Christmas tradition this year- I came across a Christmas Acts of Kindness Calendar that has a small act of kindness for every day in December leading up to Christmas. So I am blogging about that every day! Click here to see Day 1 and here to see Day 2!  Now- On to our Weekly Menu!!

In a small bowl mix all of the ingredients together.

Makes enough taco seasoning for 2 lbs of meat

I am going to use my Instapot for the FIRST time! I am pretty excited!

Intant Pot Beef & Broccoli 

A few changes I will make- coconut aminos instead of soy sauce and arrow root powder instead of cornstarch.

Chili & cinnamon rolls

The basic Chili recipe I follow is:

  • 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
  • 1/2 yellow onion & clove of garlic (diced)
  • 2 cans of tomato sauce
  • 1 can of tomatoes
  • 2 cans of beans (I used chili & black beans)
  • spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.

Heat pan with olive oil & sauté diced onion and garlic

Add ground beef and pork until cooked through

Add beans, sauce, tomatoes, & spices

If you can,  put all in a crockpot and let it all cook together for several hours

****Quick tip: I went ahead and cooked the hamburger for the Chili. Then I put it it in a freezer baggie and into the freezer. Then on Sunday that is one less step I will need to do!! This hands free baggie holder is a lifesaver!

Acts of Christmas Kindness 2017 Day 1

Hello! The Christmas season is here and it  is supposed to be the happiest time of the year!!! Sometimes though, it can get pretty overwhelming. This year, I  found this really sweet calendar (at coffeecupsandcrayons.com) that has 1 act of kindness each day in December leading up to Christmas that we are going to be doing. Hopefully this helps remind us to show kindness to others every day. Each act of kindness takes just a few minutes!  You are welcome to follow along and share with me something fun you are doing this holiday season!

Day 1 : Make a card for a soldier.

This website is a really great guide to sending letters, care packages or other items needed  for soldiers, not just at Christmas time, but all year long! It walks you through step by step and even gives you ideas on how to start your letter and what to say.  We each wrote a letter, filled out a donation form, then printed out the barcode and then your letters are ready to take to the post office!

This was a really simple process and hopefully it puts a smile on a soldier’s face 🙂
