Weekly Menu 10/23/17 & more band!!

Hello friends! We have made it to Monday again. That means another week of meals!  Over the weekend we had the last band competition of the season, which was very bittersweet since it was my daughter’s LAST marching band performance EVER!! I was also super excited to get my blog post about my coffee bar done!  

 

Monday:

Philly Cheese steak- I use Aaron’s Quick Steak. It comes frozen and you cook it from frozen. So it’s great for a quick weeknight meal. I sauté onions, mushrooms, orange bell pepper & garlic to go with it. & it is delish! This can be served on a hoagie bun, rice or cauliflower rice.

Tuesday:

Tacos with guacamole and homemade salsa

Homemade Salsa~

So I am allergic to jalapeños so that means I can’t have any store bought  salsa- I know, sad right??  So I have learned to make my own! It’s super yummy & I am going to share it with you tomorrow!

Wednesday:

Chili & Cinnamon apple muffins

Because we have a lot of busy nights this week I will pre cook the hamburger and then throw everything in the Crockpot so we can just grab it and go!

The basic recipe I follow is:

  • 2-3 lbs of meat this time I wanted to make extra so I used 2 lbs ground beef and 1 lb of ground pork (you can also use bison, bacon, or steak)
  • 1/2 yellow onion & clove of garlic (diced)
  • 2 cans of tomato sauce
  • 1 can of tomatoes
  • 2 cans of beans (I used chili & black beans)
  • spices- a mixture of chili powder, garlic powder, paprika, salt & pepper.

Heat pan with olive oil & sauté diced onion and garlic

Add ground beef and pork until cooked through

Add beans, sauce, tomatoes, & spices

If you can put all in a crockpot and let it all cook together for several hours

Thursday:

Cool Ranch Tacos (I make a few edits to her recipe)

These are super, super easy & here is what you need~

Crockpot

Chicken Thighs

3 Tablespoons of Olive Oil

2 Tablespoons of Red Wine Vinegar

1 Taco seasoning packet (or click here for a homemade version)

1 Ranch seasoning packet (or use a homemade version-1T dried parsley, 1tsp garlic powder, 1tsp onion powder, 1tsp dried onion flakes, 3/4tsp dill, 1/2tsp pepper, and 1/2 tsp salt)

*Throw everything in the crockpot, Cook on low all day, at least 8 hours

Holy Cow- it doesn’t get much easier than that!!

Coffee Bar

I have a confession to make- Coffee is one of my favorite things EVER. Life would be very sad without it. So I knew that I wanted to make a coffee bar in my kitchen. It is a spot that gets used EVERY day in our house.

As with any project, starting with a blank slate is the way to go!! Take EVERY thing out of the space!! Go through each item and  make piles for Donate/Keep/Trash.

 

Now the space is all empty!  When you have everything out of a space, it is a great time to wipe everything out.

Then only the items that have been sorted through go back. A few storage containers I added labels to that help remind anyone on where things go! Here is a great deal on Chalkboard Labels on Amazon & it is a Prime item so if you have Amazon prime- it ships free!! The other labels I simply used a blank flash card with a sharpie & a small close pin to attach!  Labels do not have to be fancy, you don’t have to spend a ton of money or time on them, but I find that once I label something, it then gives it a “home”, which is a great way for an organizing project to stay in place.

Who doesn’t love a good coffee quote…

Here is our Ninja coffee maker which I love. It does all sorts of fun things and makes really good coffee!!  To the side I keep the add ons!  Coconut oil, ground coffee in a mason jar, cinnamon, pumpkin pie spice (for the fall) & sugar packets. This can be customized to whatever you like in your coffee!

Once all ingredients are combined add coarsely mashed avocado and cilatntro

Cover with plastic wrap and refrigerate for about an hour

Weekly menu 10/16/17

Happy Monday! As much as I LOVE the weekend, I LOVE routine- so Mondays can be FUN!!! I promise! This weekend had us doing lots of band things! It was SENIOR night- we stood on the football field with our daughter and my only goal was to not completely embarrass her by being a bawl baby. I think I did pretty well… only got teary eyed and was able to keep all of my sadness inside…

Besides me being an emotional wreck …. we had  another band competition, church stuff, projects around the house (did some changes to my coffee bar that I will be sharing soon), laundry (wash, dried, folded & put away ta da!!! ), tried out my NEW mop from Norwex. OH MY GEEE~ Have you heard of this company? Every product I have from them is absolutely AMAZING!!! I will probably do a whole blog post on this stuff. Love It!! I’ll be the first one to admit that I am not a movie watcher, it usually takes me a long time to see a movie  (just ask one of my best friends- right CiCi), so I know I am a little late to the party with this one- but Warrior is a great movie.  My husband has seen it probably a trillion times because that’s how he is with movies, he started watching it and I got hooked- GREAT MOVIE. I may be the last person on Earth to have seen it, but if you haven’t seen it yet, I am here to tell you- totally worth your time.

 

 

 

But obviously we need to eat dinner, so I have our weekly menu for your viewing pleasure~

Monday: 

Philly Cheese Steaks- this is such a fast and easy meal. The steak is bought frozen and you cook it from a frozen state. No thawing or anything. I sauté up some mushrooms and onions to go with it, add some swiss cheese! My kids really like hoagie buns, but us grownups put it over white rice or cauliflower rice.

Tuesday:

Tacos with Guacamole. Stop by tomorrow and I will give you THE BEST Guacamole recipe!

Wednesday:

Buffalo Chicken Casserole- from my favorite Paleo Blog PaleOMG! 

Thursday:

Pork Shoulder Roast

Have you heard of the Pioneer Woman? I love her show on Food Network. She doesn’t typically make healthy meals, but I have learned to adapt them a little, by making some simple changes. I personally make this into a crockpot meal, just because it works great for us on Mondays to do a crockpot meal.

The edits I make are:

  • When making the marinade/sauce I go step by step, per the recipe except I sub out the sugar- instead of brown sugar, I use coconut sugar
  • To make it into a crockpot meal, after making the sauce I coat the entire pork roast in the crockpot, flipping it around in it so it coats all sides. Then I put it on low and cook it all day long, over 12 hours

It makes the best shredded pork EVER! You can put it on tortillas, make it into a bowl with rice,or cauliflower rice, or just eat it by itself really- it’s that good.

Peanut Butter Chicken

  • In large saucepan, heat olive oil on medium heat. Add garlic and chopped onion. Cook 4-5 minutes until onions are translucent- add salt & pepper
  • Add chicken to onions, cook until chicken is done
  • Add ginger, tomatoes, cayenne, paprika, crushed red pepper, and broccoli. Reduce heat to medium low & add water. Allow to simmer until sauce starts to become thick. This takes a while.
  • Add peanut butter in small amounts at time.
  • Enjoy!!

Weekly Menu 10/9/17 & discovering podcasts!

 

Our weekend was full of fun events including a full day of band fun- parade and competition and celebrating my Grandma’s 93rd Birthday! Also I got REALLY into podcasts this past week. Does anyone else just LOVE them? Oh my goodness I am amazed at how much more enjoyable it makes driving!!!

Monday:

Left overs- I made a big batch of a pork roast over the weekend. It makes great leftovers!

Tuesday:

Taco Lasagna Casserole~ new recipe from PaleOMG. I will modify it slightly since I am allergic to jalapeños, but other than that it looks amazing!

Wednesday:

Peanut Butter Chicken- I made this in a previous week (about a month ago), but look on my blog for the full recipe on Wednesday morning!

Weekly Menu 10/2/17

It was certainly an exciting weekend for us! My husband competed in a Strongman Competition in Minnesota, which is a really cool event to experience!

Then we ate some great food

 

Well back to the weekly menu!!!

Monday:

Cool Ranch Tacos 

This has made it’s way to our weekly rotation. It is yummy! It makes great leftovers too, so I try to make extras!

Tuesday:

Spaghetti

I make regular noodles for the kids, but for me, I make  spaghetti squash “noodles”. Have you done this? It’s really easy and tastes a lot like pasta.

Here are some easy instructions on making them! 

Wednesday:

Paleo Chicken ala King

  • 4 ounces of bacon (chopped)
  • 1 onion (chopped)
  • 1 leek (chopped)
  • 1 red bell pepper (chopped)
  • Chicken thighs (diced in bite sized pieces)
  • 1/2 C White wine
  • 1 (14 oz) can full fat coconunt milk
  • 1 T arrow root power (dissolved in 1/4 c coconut milk)
  • Trader Joe’s 21 seasoning salute, sea salt & oregano

Heat in large pan over medium-high heat, add bacon and cook until semi crispy. Set aside- keep bacon fat in pan

Add onion & leeks to pan- cook appx 3 minutes

Add white wine & cook until reduced by 3/4 cup

Add all but 1/4 C coconut milk

Add arrowroot powder/coconut mixture and cook until thickened

Season with sea salt, oregano & Trader Joe’s 21 seasoning salute

I like to serve this over sweet potatoes, it would be great over rice or cauliflower rice as well!
